Basically if its am important piece that was owned by someone important. Also if the coins have any value besides the gold since they were mounted. One of the 3 roubles is from 1877 which seems is a rare date? Also are there variations of these coins because the symbols in the back are different sizes on one coin. Btw If someone could translate the inscription and some details on the mint marks would be great. All those gold coins that you have shown - if they weren't used as jewellery pieces, they are worth a fair amount of money and GOOD prenieum, not just melt. Translation goes as 5 ruble, pure gold of 1 zol. 39 dol. (old Russian weight unit) and 3 ruble, pure gold of 81 (?) dol. Sorry, don't remember how it is converted off my head. Al Going back to your original post, - yes, your coins can find some extra value even they were mounted. Because they were mounted, i do not think there is additional value for mint-master initials being larger/smaller. You latest picture is OK.
