Although now that I'm deeper into the hobby than I was in '76, I think I'd've liked to see the whole run of coins from the penny to the dollar issued with their original 18th century designs, scaled appropriately. Even include a half cent in the proof and mint sets -- they couldn't realistically release a circulating one, though. The RCM did that for the 90th anniversary of the mint in Canada in 1998 by using the 1908 designs, but with the Queen instead of EVII.
