I went to the ANDA Coin & Banknote show in Melbourne today and must say I think I did quite well for myself, focusing on international notes. Here is my bounty for the day Hong Kong - current series HSBC notes. New Zealand Albania

I do believe that Her Majesty will be getting the boot from the new series of Fijian notes.

Koala's have only made rare appearances on "official" circulating coins. The was a one-off 50 cent piece a few years back that featured a koala along with a wombat and the was the NCLT $200 bullion coin from the 1980's. I can't think of banknote featuring a koala though. The koala might feature more frequently on the collector's crap that the Perth Mint churn out! The kangaroo is far more common though. As the kangaroo (along with the emu) feature on Australia's coat of arms, any banknote that features the the coat of arms features a roo! Currently in terms of coins the kangaroo curently features in the default designs for the 50c & $1 coins. In pre-decimal days the roo famously featured on the half penny, penny, and as part of the coat of arms on the sixpence & florin

I don't know your budget, but Aussie predecimal doesn't come cheap these day, the note I posted above is one I picked up earlier this year in VF condition (a nice VF though) for over A$650 (as of today that translate to US$650!). I'm trying to get as much Aussie predecimal I can afford while I can, especially the George V & George VI issues. I picked up one of these earlier this week

I have one of those too. Picked it up for about A$95 about 2-3 years ago, I glad to hear that they have appreciated well!

In Australia, animals tend to be the domain of coins, but there are a few examples of animals on backnotes. Pre decimal 10 pound, George V & George VI issues. Signature series looks like Coombs/Watts so most likely late 1940's/early 1950's $1 - 1966-1984 Aboriginal artwork $2 - 1966-1988 John Macarthur and marino sheep Current $10 & $100 note, both featuring horses.
